ground beef
8 oz
wide egg noodles
15 oz
diced tomatoes
1 pkg
taco seasoning mix
15 oz
ricotta cheese
15 oz
sour cream
2 c
shredded sharp cheddar cheese
salt and pepper to taste

How to Make Joanna's Mexican Lasagna


  • 1Brown and drain the ground beef.
  • 2Prepare with taco seasoning as directed on package.
  • 3Stir in canned tomatoes and simmer until most of the liquid has been absorbed.
  • 4Preheat oven to 350. Meanwhile boil the egg noodles, drain, and mix in the ricotta cheese and sour cream.
  • 5In 13x9 pan, layer noodles, meat, cheese. Alternate until everything is in the pan. End with cheese on top.
  • 6Bake at 350 for 30-40 minutes until bubbly. Enjoy!
