Ingredients

  • 1 1/2 pounds ground beef
  • 8 ounces wide egg noodles
  • 15 ounces diced tomatoes
  • 1 package taco seasoning mix
  • 15 ounces ricotta cheese
  • 15 ounces sour cream
  • 2 cups shredded sharp cheddar cheese
  • - salt and pepper to taste

How To Make joanna's mexican lasagna

  • Step 1
    Brown and drain the ground beef.
  • Step 2
    Prepare with taco seasoning as directed on package.
  • Step 3
    Stir in canned tomatoes and simmer until most of the liquid has been absorbed.
  • Step 4
    Preheat oven to 350. Meanwhile boil the egg noodles, drain, and mix in the ricotta cheese and sour cream.
  • Step 5
    In 13x9 pan, layer noodles, meat, cheese. Alternate until everything is in the pan. End with cheese on top.
  • Step 6
    Bake at 350 for 30-40 minutes until bubbly. Enjoy!
