Ingredients

  • 1/2 cup favorite salsa
  • 1/4 cup light sour cream
  • 1 teaspoon canola oil
  • 1 - chopped onion
  • 3 teaspoons minced garlic
  • 1 pound ground turkey breast
  • 2 large plum tomatoes, diced
  • 1 - 14 oz can kidney beans, drained
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1/4 cup chopped parsley
  • 8 cups shredded romaine lettuce
  • 1 cup reduced-fat, shredded mexican cheese

How To Make healthy taco salad

  • Step 1
    In lg bowl, combine salsa and sour cream, mix well. Heat oil in lg skillet over medium heat. Add ground turkey, onion and garlic untill fully cooked.
  • Step 2
    Add tomatoes, beans, cumin and chili powder. Cook, astirring for 3 mins. Remove skillet from heat. Stir in parsley and 1/4 cup salsa mix.
  • Step 3
    Add lettuce to remaining salsa mix, toss to coat. Divide lettuce mix among 4 plates and top w/ turkey mix. Sprinkle w/ cheese.
