  • 1/2 c
    favorite salsa
  • 1/4 c
    light sour cream
  • 1 tsp
    canola oil
  • 1
    chopped onion
  • 3 tsp
    minced garlic
  • 1 lb
    ground turkey breast
  • 2 large
    plum tomatoes, diced
  • 1
    14 oz can kidney beans, drained
  • 2 tsp
  • 2 tsp
    chili powder
  • 1/4 c
    chopped parsley
  • 8 c
    shredded romaine lettuce
  • 1 c
    reduced-fat, shredded mexican cheese

How to Make Healthy taco salad


  1. In lg bowl, combine salsa and sour cream, mix well. Heat oil in lg skillet over medium heat. Add ground turkey, onion and garlic untill fully cooked.
  2. Add tomatoes, beans, cumin and chili powder. Cook, astirring for 3 mins. Remove skillet from heat. Stir in parsley and 1/4 cup salsa mix.
  3. Add lettuce to remaining salsa mix, toss to coat. Divide lettuce mix among 4 plates and top w/ turkey mix. Sprinkle w/ cheese.
