favorite salsa
1/4 c
light sour cream
1 tsp
canola oil
chopped onion
3 tsp
minced garlic
1 lb
ground turkey breast
2 large
plum tomatoes, diced
14 oz can kidney beans, drained
2 tsp
2 tsp
chili powder
1/4 c
chopped parsley
8 c
shredded romaine lettuce
1 c
reduced-fat, shredded mexican cheese

How to Make Healthy taco salad


  • 1In lg bowl, combine salsa and sour cream, mix well. Heat oil in lg skillet over medium heat. Add ground turkey, onion and garlic untill fully cooked.
  • 2Add tomatoes, beans, cumin and chili powder. Cook, astirring for 3 mins. Remove skillet from heat. Stir in parsley and 1/4 cup salsa mix.
  • 3Add lettuce to remaining salsa mix, toss to coat. Divide lettuce mix among 4 plates and top w/ turkey mix. Sprinkle w/ cheese.
