2celery stalks sliced thin

3 clovegarlic minced

1/2 cchopped onion

1/2 cbarley
-
1 can(s)diced fire roasted tomatoes (don't drain)

12 ozbag of cubed butternut squash (walmart)

1zuchinni diced
-
6 cvegetable broth
-
1 can(s)green beans
-
1 can(s)white beans drained
-
8 ozsmoked sausage cubed
-
·pinch of salt and pepper

1 tspcajun seasoning
How to Make Harvest Soup Three Ways
- heat a soup pot with 1 tbs of olive oil. Cook celery, garlic, onion and barley over med. heat for 3-4 minutes
- Add rest of ingredients...bring to a boil then reduce to low for 90 minutes. Enjoy
- Variation number two. Cook 8 oz of ground turkey instead of sausage. Add italian seasoning instead of cajun spice
- Variation number three. Cook 8 oz of lean ground sirloin instead of sausage. Add 1 can of chopped green chili and instead of cajun spice add chili spice.
