Ingredients
- 2 - celery stalks sliced thin
- 3 cloves garlic minced
- 1/2 cup chopped onion
- 1/2 cup barley
- 1 can diced fire roasted tomatoes (don't drain)
- 12 ounces bag of cubed butternut squash (walmart)
- 1 - zuchinni diced
- 6 cups vegetable broth
- 1 can green beans
- 1 can white beans drained
- 8 ounces smoked sausage cubed
- - pinch of salt and pepper
- 1 teaspoon cajun seasoning
How To Make harvest soup three ways

Step 1heat a soup pot with 1 tbs of olive oil. Cook celery, garlic, onion and barley over med. heat for 3-4 minutes

Step 2Add rest of ingredients...bring to a boil then reduce to low for 90 minutes. Enjoy

Step 3Variation number two. Cook 8 oz of ground turkey instead of sausage. Add italian seasoning instead of cajun spice

Step 4Variation number three. Cook 8 oz of lean ground sirloin instead of sausage. Add 1 can of chopped green chili and instead of cajun spice add chili spice.
