this is a breakfast that my mom has made for us since we were young. hope you guys enjoy it like i do.

1 large
tomato diced
1 can(s)
organic garbanzo beans
1/2 medium
diced onion
1 large
chopped jalapeno
1/4 c
cotija cheese
2 Tbsp
cooking oil
salt and pepper to taste
cilantro for decoration

How to Make Garbanzo Breakfast


  • 1In a non stick pan add oil to medium-hi heat. Drain the juice out of the garbanzo beans can, rinse them off and add them to the pan and let cook for about 5 min.
  • 2add the tomato, onion, jalapeno, and salt and pepper to the pan and saute for 2 min or so.
  • 3in a plate whisk eggs together and then add to the pan.
  • 4once eggs are cooked turn off the flame and add the cheese on top of garbanzos and put a lid on it until cheese is melted.
  • 5once cheese is melted sprinkle cilantro for garnish.
  • 6we usually serve it with a side re-fried beans,corn tortilla, and salsa. Hope you guys enjoy it.
