this is a breakfast that my mom has made for us since we were young. hope you guys enjoy it like i do.

  • 5 medium
  • 1 large
    tomato diced
  • 1 can(s)
    organic garbanzo beans
  • 1/2 medium
    diced onion
  • 1 large
    chopped jalapeno
  • 1/4 c
    cotija cheese
  • 2 Tbsp
    cooking oil
  • ·
    salt and pepper to taste
  • ·
    cilantro for decoration

How to Make Garbanzo Breakfast


  1. In a non stick pan add oil to medium-hi heat. Drain the juice out of the garbanzo beans can, rinse them off and add them to the pan and let cook for about 5 min.
  2. add the tomato, onion, jalapeno, and salt and pepper to the pan and saute for 2 min or so.
  3. in a plate whisk eggs together and then add to the pan.
  4. once eggs are cooked turn off the flame and add the cheese on top of garbanzos and put a lid on it until cheese is melted.
  5. once cheese is melted sprinkle cilantro for garnish.
  6. we usually serve it with a side re-fried beans,corn tortilla, and salsa. Hope you guys enjoy it.
