Ingredients
- 5 medium eggs
- 1 large tomato diced
- 1 can organic garbanzo beans
- 1/2 medium diced onion
- 1 large chopped jalapeno
- 1/4 cup cotija cheese
- 2 tablespoons cooking oil
- - salt and pepper to taste
- - cilantro for decoration
How To Make garbanzo breakfast

Step 1In a non stick pan add oil to medium-hi heat. Drain the juice out of the garbanzo beans can, rinse them off and add them to the pan and let cook for about 5 min.

Step 2add the tomato, onion, jalapeno, and salt and pepper to the pan and saute for 2 min or so.

Step 3in a plate whisk eggs together and then add to the pan.

Step 4once eggs are cooked turn off the flame and add the cheese on top of garbanzos and put a lid on it until cheese is melted.

Step 5once cheese is melted sprinkle cilantro for garnish.

Step 6we usually serve it with a side re-fried beans,corn tortilla, and salsa. Hope you guys enjoy it.
