this is a breakfast that my mom has made for us since we were young. hope you guys enjoy it like i do.

Ingredients

  • 5 medium eggs
  • 1 large tomato diced
  • 1 can organic garbanzo beans
  • 1/2 medium diced onion
  • 1 large chopped jalapeno
  • 1/4 cup cotija cheese
  • 2 tablespoons cooking oil
  • - salt and pepper to taste
  • - cilantro for decoration

How To Make garbanzo breakfast

  • Step 1
    In a non stick pan add oil to medium-hi heat. Drain the juice out of the garbanzo beans can, rinse them off and add them to the pan and let cook for about 5 min.
  • Step 2
    add the tomato, onion, jalapeno, and salt and pepper to the pan and saute for 2 min or so.
  • Step 3
    in a plate whisk eggs together and then add to the pan.
  • Step 4
    once eggs are cooked turn off the flame and add the cheese on top of garbanzos and put a lid on it until cheese is melted.
  • Step 5
    once cheese is melted sprinkle cilantro for garnish.
  • Step 6
    we usually serve it with a side re-fried beans,corn tortilla, and salsa. Hope you guys enjoy it.
