I like to slow cook alot of my food when i busy at my Pampered Chef Parties, so when i come home I like to relax and eat a bowl of this soup. Great to use for a filling for pasrty and to make burrito. My boyfriend like when I cook this because the smell remindes him of his moms cooking.:) Good feeling..

2 c
chicken broth
1 can(s)
echilada sauce
1 can(s)
mild green chiles
1 pkg
bone in chicken breast, skin removed
1 can(s)
black beans
bag of salad mix
shredded mexican cheese blended
chopped fresh cilanto or parsley


1Spray 4- to 5- quart slow cooker with cooking spray. In cooker , mix broth , enchilada sauce and chiles. Place chicken into enchilada sauce mixture spoon sauce over chicken.
2Cover: cook on low heat setting 7-8 hours
3Remove chicken from cooker with slotted spoon. Stir in beans and corn into mixture in cooker. increase heat setting to high. Cover : cook 5-10 minutes longer. Meanwhile , shred chicken by pulling apart with 2 forks: return to cooker. Cook until throghly heated.
4Top each serving with cheese, cilantro or parsley and tortilla chips.
