How to Make Dairy Free Enchiladas
- 1Heat refried beans over medium heat. Add water and cumin. Makes the beans taste more authentic.
- 2Fill corn tortillas with refried beans and "cheese"
roll them up and arrange in a 9x13 glass baking dish.
Cover with pureed chili top with "cheese"
Place under broiler on low until "cheese" is all melted. Serve with mexican rice and Enjoy!
