Finally I can eat enchiladas again with this easy healthy recipe!

Ingredients

  • - my vegan chili recipe (pureed)
  • 10 - corn tortillas
  • 1 bag - veggie shreds chedder
  • 1 can vegetarian refried beans or bush traditional refried beans
  • 2 tablespoons water
  • 2 teaspoons cumin

How To Make dairy free enchiladas

  • Step 1
    Heat refried beans over medium heat. Add water and cumin. Makes the beans taste more authentic.
  • Step 2
    Fill corn tortillas with refried beans and "cheese" roll them up and arrange in a 9x13 glass baking dish. Cover with pureed chili top with "cheese" Place under broiler on low until "cheese" is all melted. Serve with mexican rice and Enjoy!
