cauliflower tacos

I am not a vegetarian or vegan, but cook that way 90 percent of the time, because it's healthy. My grandsons have laughed at my recipes, then LOVED them. This 'taco meat' can be used with crisp tacos, taco salads, soft tacos..many ways. I normally make my grandson's turkey tacos, but when I served this, they hardly noticed and the flavor was all there.Hope you enjoy

Ingredients
- 3 cups cauliflower, small florets
- 1 large onion
- 1 large bell pepper
- 6 tablespoons taco seasoning mix
- 1 medium jalapeno peppers
- 6 medium cherry tomatoes
- - olive oil, light spray
How To Make cauliflower tacos

Step 1Chop the cauliflower in a food processor or use a hand grater to shred to small pieces.

Step 2Chop onion, bell pepper and jalapeno in food processor or chop very fine.

Step 3Spray skillet with olive oil spray and saute all ingredients. Saute until tender.

Step 4Add taco seasoning and let cook on a low heat until mixture is soft and cauliflower has lost any crunch.

Step 5Serve in crisp taco shells, soft tortillas, or taco salad. Enjoy.
