broccoli with tomatoes

I made this for lunch last week (had stuff in the fridge). Simple, but yummy. Would make a good side dish for dinner, also.

Ingredients

  • 2 teaspoons butter, unsalted (or olive oil if you prefer)
  • 1-2 clove garlic, minced
  • 1 can 14.5 oz. diced tomatoes w/chiles, do not drain (italian style would also work well)
  • 1/8-1/4 cup fresh cilantro, chopped (or basil if using italian style tomatoes)
  • 1 1/2 pounds broccoli florets
  • - salt and pepper, to taste

How To Make broccoli with tomatoes

  • Step 1
    Melt butter in a large, non-reactive saucepan over medium high heat.
  • Step 2
    Add garlic, tomatoes and cilantro; simmer uncovered 2-3 minutes.
  • Step 3
    Add broccoli, and salt and pepper to taste.
  • Step 4
    Reduce heat to medium. Cover and simmer 7-8 minutes or until broccoli is tender.
