I got this recipe from my dad. I especially like it because it has no meat.

Ingredients

  • 4 cups baked tortilla chips
  • 1 - 15 oz can black beans, drained
  • 1/2 cup bottled hot salsa
  • 2 cups reduced-fat, shredded mexican-style cheese
  • 1/2 cup bottled, roasted red bell peppers, cut into strips
  • 2 tablespoons canned, sliced chile peppers
  • - sour cream, as garnish

How To Make bean and cheese nachos

  • Step 1
    Heat oven to 425. Arrange chips on lg baking sheet.In small saucepan, combine black beans and salsa. Cook, stirring, over medium heat until heated through.
  • Step 2
    Spoon bean mix over chips. Sprinkle w/ cheese and chile peppers. Bake about 5 mins, or until cheese melts. Serve w/ sour cream.
