One day I had some leftover pork from a pork roast. Came up with thise recipe to spice up my leftovers. This will work with any leftover meat.

Ingredients

  • 1 - green pepper
  • 1 - yellow onions
  • 2 tablespoons canola oil
  • 2 cups leftover pork
  • 2 cups mexican cheese blend
  • 1 cup favorite bbq sauce
  • 4 - flour tortillas

How To Make bbq quesedillas

  • Step 1
    Slice leftover pork into small strips,then set aside.
  • Step 2
    Cut pepper and onion into small strips.
  • Step 3
    Heat oil. After oil heated, saute peppers and onions until still slightly browned.
  • Step 4
    Add pork to the onions and peppers just until pork is warm. Then transfer all to a plate and set to side.
  • Step 5
    Heat large skillet on med to med high. Take tortilla shell and spray 1 side with cooking spray. Lay half of shell on pan. Add 1/4 of meat mixture on shell. Pour desired amount of BBQ sauce over mixture, then add 1/4 of cheese. Fold other half shell over and heat until shell slightly browned. Flip over and brown other side. Repeat until all 4 quesedillas are done.
  • Step 6
    Serve with additional BBQ sauce or sour cream.
