paul's italian-style meatloaf
This is from someone who used to run an old BBS (remember those?)that had a cooking "echo". I use 1/2 ground beef, and 1/2 ground turkey to make it leaner. Use a commercial canned marinara or make your own. Great with pasta or rice.

Ingredients
- 1 pound ground beef
- 1/2 cup dry bread crumbs, italian seasoned
- 1/2 cup milk
- 1 large egg
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- - salt and pepper, to taste
- 2 teaspoons olive oil
- 1 small yellow onion, minced
- 1 teaspoon minced garlic
- 2 cups marinara sauce, canned or homemade
How To Make paul's italian-style meatloaf

Step 1Pre-heat the oven to 350°F. Put a cookie sheet in oven while preheating. Coat a 9x5-inch loaf pan with nonstick cooking spray.

Step 2In a large bowl, mix together the beef, breadcrumbs, milk, egg and herbs. Salt and pepper to taste.

Step 3Heat the oil in a skillet. Add the onion and garlic. Cook until just soft. Mix into the meat mixture.

Step 4Put into prepared loaf pan. Place loaf pan on preheated cookie sheet and bake for 1 hour or until firm in the middle. While meatloaf is baking, heat marinara sauce on stove.

Step 5Cool slightly and slice. Top slices with heated sauce and serve.
