A lovely twist on meatloaf.

Ingredients

  • 2 - eggs
  • 1 cup evaporated milk
  • 1 1/2 cups graham cracker crumbs (about 22 squares)
  • 1 1/4 pounds fully cooked diced ham
  • 1 1/4 pounds ground bulk pork sausage
  • 1 can condensed tomato soup
  • 1 + 2 T cups brown sugar
  • 1/3 cup vinegar
  • 1 teaspoon ground mustard

How To Make mini pork meatloafs

  • Step 1
    Combine eggs, milk and cracker crumbs; mix well. Add ham and pork, mix. I used Cumberland Gap ham.
  • Step 2
    When well mixed, shape into 8 mini meatloaf a or use mini tin.
  • Step 3
    Combine soup, sugar, vinegar and mustard. Drizzle over loafs. Half way through baking drizzle again.
  • Step 4
    Bake uncovered at 350 for one hour.
