louisiana cowboy meatloaf
I created a new meatloaf recipe inspired by Louisiana Cowboy meals. It has crushed barbecue potato chips on the bottom and is filled with blue cheese and mexican cheese blend.

Ingredients
- 2 cups crushed barbecue potato chips, divided
- 1 tablespoon olive oil
- 1 large red onion, peeled and diced
- 1 medium carrot, chopped
- 1 tablespoon sweet and tangy seasoning
- 2 pounds ground round
- 1 tablespoon hamburger seasoning
- 3/4 cup panko bread crumbs
- 1/2 cup milk
- 1 packet dry onion soup mix
- 4 eggs, beaten
- 3/4 cup crumbled blue cheese
- 3/4 cup shredded mexican cheese blend
- 3/4 cup hickory smoked barbecue sauce
How To Make louisiana cowboy meatloaf

Step 1Preheat oven to 375 degrees F.

Step 2Coat the bottom and sides of a 9x5-inch loaf pan with cooking spray. Add 1 cup crushed barbecue potato chips; mix well.

Step 3Heat olive oil in a large, deep skillet over medium heat. Add diced red onion and chopped carrots. Saute for 5 minutes or until are tender. Season with sweet and tangy seasoning. Set aside.

Step 4Mix ground round,hamburger seasoning ,bread crumbs, milk, eggs and dry onion soup mix in a large bowl for 3 minutes until combined.

Step 5Press half of the meat mixture into the bottom of the prepared loaf pan. Add onion-carrot mixture,crumbled blue cheese and shredded mexican cheese blend.

Step 6Top with remaining meat to form a loaf. Spread barbecue sauce on top and sprinkle with remaining crushed potato chips.

Step 7Bake in preheated oven for 30 minutes or until the meatloaf is set. Let stand for 10 minutes before slicing.
