This is a healthy meat loaf and a very good way to get kids to eat their veggies.

Ingredients

  • 1/2 stick
    butter
  • 2 stalk(s)
    celery, finely chopped
  • 1 small
    onion, finely chopped`
  • 1 large
    carrot, peeled and grated
  • 1 large
    golden delicious apple, peeled, cored and finely chopped
  • 2 lb
    ground turkey
  • 1
    egg
  • 2/3 c
    unsweetened applesauce (divided)
  • 2 Tbsp
    milk
  • 1/2 c
    panko bread crumbs
  • 1 Tbsp
    dijon mustard
  • 2 tsp
    honey
  • 3/4 tsp
    sage
  • 1/2 tsp
    rosemary
  • 1/2 tsp
    thyme
  • 1/4 tsp
    marjoram
  • dash
    nutmeg
  • to taste
    salt & pepper

How to Make Loaded Turkey Loaf

Step-by-Step

  1. Preheat oven to 400 degrees. Spray a 9 x 13 inch baking dish with cooking spray.
  2. Melt butter in a large skillet over medium heat. Cook celery, onion and carrot, stirring occasionally, until veggies are tender. (about 2 mins.)
  3. Add apple and cook 2 more minutes. Remove from heat and cool to room temperature. (about 10 minutes)
  4. In a large bowl, mix together turkey, egg,1/3 cup applesauce, milk, bread drumbs and seasonings.
  5. Add onion mixture and stir gently until just combined. Transfer to the prepared baking dish and shape into a 9 x 5 inch loaf.
  6. In a small bowl, stir together mustard, honey and 1/3 cup applesauce.
  7. Spread over top and sides of the loaf.
  8. Bake foe 30 minutes.
  9. Reduce temperature to 375 degrees and cook for 25 minutes more or until done.
  10. Let stand 10 minutes before serving.
