This is a healthy meat loaf and a very good way to get kids to eat their veggies.

celery, finely chopped

onion, finely chopped`

carrot, peeled and grated
1 large
golden delicious apple, peeled, cored and finely chopped
2 lb
ground turkey
1
egg
2/3 c
unsweetened applesauce (divided)
2 Tbsp
milk
1/2 c
panko bread crumbs
1 Tbsp
dijon mustard
2 tsp
honey
3/4 tsp
sage
1/2 tsp
rosemary
1/2 tsp
thyme
1/4 tsp
marjoram
dash
nutmeg
to taste
salt & pepper

How to Make Loaded Turkey Loaf

Step-by-Step

  • 1Preheat oven to 400 degrees. Spray a 9 x 13 inch baking dish with cooking spray.
  • 2Melt butter in a large skillet over medium heat. Cook celery, onion and carrot, stirring occasionally, until veggies are tender. (about 2 mins.)
  • 3Add apple and cook 2 more minutes. Remove from heat and cool to room temperature. (about 10 minutes)
  • 4In a large bowl, mix together turkey, egg,1/3 cup applesauce, milk, bread drumbs and seasonings.
  • 5Add onion mixture and stir gently until just combined. Transfer to the prepared baking dish and shape into a 9 x 5 inch loaf.
  • 6In a small bowl, stir together mustard, honey and 1/3 cup applesauce.
  • 7Spread over top and sides of the loaf.
  • 8Bake foe 30 minutes.
  • 9Reduce temperature to 375 degrees and cook for 25 minutes more or until done.
  • 10Let stand 10 minutes before serving.
