This is a healthy meat loaf and a very good way to get kids to eat their veggies.

Ingredients

  • 1/2 stick butter
  • 2 stalks celery, finely chopped
  • 1 small onion, finely chopped`
  • 1 large carrot, peeled and grated
  • 1 large golden delicious apple, peeled, cored and finely chopped
  • 2 pounds ground turkey
  • 1 - egg
  • 2/3 cup unsweetened applesauce (divided)
  • 2 tablespoons milk
  • 1/2 cup panko bread crumbs
  • 1 tablespoon dijon mustard
  • 2 teaspoons honey
  • 3/4 teaspoon sage
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/4 teaspoon marjoram
  • dash - nutmeg
  • to taste - salt & pepper

How To Make loaded turkey loaf

  • Step 1
    Preheat oven to 400 degrees. Spray a 9 x 13 inch baking dish with cooking spray.
  • Step 2
    Melt butter in a large skillet over medium heat. Cook celery, onion and carrot, stirring occasionally, until veggies are tender. (about 2 mins.)
  • Step 3
    Add apple and cook 2 more minutes. Remove from heat and cool to room temperature. (about 10 minutes)
  • Step 4
    In a large bowl, mix together turkey, egg,1/3 cup applesauce, milk, bread drumbs and seasonings.
  • Step 5
    Add onion mixture and stir gently until just combined. Transfer to the prepared baking dish and shape into a 9 x 5 inch loaf.
  • Step 6
    In a small bowl, stir together mustard, honey and 1/3 cup applesauce.
  • Step 7
    Spread over top and sides of the loaf.
  • Step 8
    Bake foe 30 minutes.
  • Step 9
    Reduce temperature to 375 degrees and cook for 25 minutes more or until done.
  • Step 10
    Let stand 10 minutes before serving.
