This is a nice alternative to your usual meatloaf. Juicy and full of flavor. Perfect served with mashed potatoes, fried cabbage and apples.

Ingredients

  • - 1 1/2 lbs ground beef,
  • - 1/2 cup chopped onion
  • - 1/2 cup chopped green pepper
  • - 3/4 cup tomato juice
  • - 2 eggs, beaten
  • - 1 tsp salt
  • - 1/4 tsp black pepper
  • - 1/4 tsp red pepper flakes
  • - 1 cup crushed soda cracker crumbs
  • SAUCE
  • - 1 cup ketchup
  • - 2 tsp yellow mustard
  • - 2 tbsp dark brown sugar
  • - pinch of salt

How To Make it's meatloaf

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    In a large bowl add all the ingredients together, mixing well, then pour evenly into a baking pan and set aside until needed.
  • Step 3
    In a small bowl add the ketchup, mustard, brown sugar and salt; mixing well; then pour over top of the meatloaf.
  • Step 4
    Bake for 60 minutes at 375 and allow to cool for 5 minutes before cutting and serving.
