This is a nice alternative to your usual meatloaf. Juicy and full of flavor. Perfect served with mashed potatoes, fried cabbage and apples.

Ingredients
- - 1 1/2 lbs ground beef,
- - 1/2 cup chopped onion
- - 1/2 cup chopped green pepper
- - 3/4 cup tomato juice
- - 2 eggs, beaten
- - 1 tsp salt
- - 1/4 tsp black pepper
- - 1/4 tsp red pepper flakes
- - 1 cup crushed soda cracker crumbs
- SAUCE
- - 1 cup ketchup
- - 2 tsp yellow mustard
- - 2 tbsp dark brown sugar
- - pinch of salt
How To Make it's meatloaf

Step 1Preheat oven to 375 degrees F.

Step 2In a large bowl add all the ingredients together, mixing well, then pour evenly into a baking pan and set aside until needed.

Step 3In a small bowl add the ketchup, mustard, brown sugar and salt; mixing well; then pour over top of the meatloaf.

Step 4Bake for 60 minutes at 375 and allow to cool for 5 minutes before cutting and serving.
