This is a nice alternative to your usual meatloaf. Juicy and full of flavor.

Perfect served with mashed potatoes, fried cabbage and apples.

  • ·
    1 1/2 lbs ground beef,
  • ·
    1/2 cup chopped onion
  • ·
    1/2 cup chopped green pepper
  • ·
    3/4 cup tomato juice
  • ·
    2 eggs, beaten
  • ·
    1 tsp salt
  • ·
    1/4 tsp black pepper
  • ·
    1/4 tsp red pepper flakes
  • ·
    1 cup crushed soda cracker crumbs

  • ·
    1 cup ketchup
  • ·
    2 tsp yellow mustard
  • ·
    2 tbsp dark brown sugar
  • ·
    pinch of salt

How to Make It's Meatloaf


  1. Preheat oven to 375 degrees F.
  2. In a large bowl add all the ingredients together, mixing well, then pour evenly into a baking pan and set aside until needed.
  3. In a small bowl add the ketchup, mustard, brown sugar and salt; mixing well; then pour over top of the meatloaf.
  4. Bake for 60 minutes at 375 and allow to cool for 5 minutes before cutting and serving.
