glazed meatloaf

This is my adaptation of my daddy's meatloaf. It is moist and flavorful and pure comfort food. I serve with mashed potatoes and a salad or vegetable.

Ingredients

  • 2 pounds lean ground beef
  • 1 pound ground pork
  • 2/3 cup cracker crumbs (club or ritz)
  • 2/3 cup italian bread crumbs
  • 1 to 1 1/2 cups half and half (light cream)
  • 2 eggs
  • 1 cup carrots, grated
  • 2 teaspoons garlic powder
  • 1 onion, grated
  • 1 medium bell pepper, diced
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons steak sauce or hp sauce
  • 1 1/2 tablespoons fresh chopped parsley
  • 1 teaspoon celery salt
  • salt and pepper
  • GLAZE
  • 1 cup ketchup
  • 3 tablespoons dijon mustard
  • 2 tablespoons bbq sauce
  • 2 tablespoons honey
  • 1 tablespoon minced onion
  • 2 teaspoons garlic powder
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon steak sauce or hp sauce

How To Make glazed meatloaf

  • Step 1
    Preheat oven to 375 degrees. In a large bowl, mix cracker crumbs and bread crumbs together and pour 1 cup of half and half over the mix. Let set for 5-10 minutes to soak.
  • Step 2
    Add all remaining loaf ingredients to bowl and mix until well combined and uniform. Add additional half & half as needed until the consistency is very wet but still able to form a loaf.
  • Step 3
    Divide the mixture in half and place each in a 9 x 5 loaf pan. Form into even loaves.
  • Step 4
    Mix all glaze ingredients and pour half over each loaf. Bake for 45-60 minutes until juice runs clear. Let sit for 10 minutes before slicing.
