glazed meatloaf
This is my adaptation of my daddy's meatloaf. It is moist and flavorful and pure comfort food. I serve with mashed potatoes and a salad or vegetable.

Ingredients
- 2 pounds lean ground beef
- 1 pound ground pork
- 2/3 cup cracker crumbs (club or ritz)
- 2/3 cup italian bread crumbs
- 1 to 1 1/2 cups half and half (light cream)
- 2 eggs
- 1 cup carrots, grated
- 2 teaspoons garlic powder
- 1 onion, grated
- 1 medium bell pepper, diced
- 2 tablespoons worcestershire sauce
- 2 tablespoons steak sauce or hp sauce
- 1 1/2 tablespoons fresh chopped parsley
- 1 teaspoon celery salt
- salt and pepper
- GLAZE
- 1 cup ketchup
- 3 tablespoons dijon mustard
- 2 tablespoons bbq sauce
- 2 tablespoons honey
- 1 tablespoon minced onion
- 2 teaspoons garlic powder
- 1 tablespoon worcestershire sauce
- 1 tablespoon steak sauce or hp sauce
How To Make glazed meatloaf

Step 1Preheat oven to 375 degrees. In a large bowl, mix cracker crumbs and bread crumbs together and pour 1 cup of half and half over the mix. Let set for 5-10 minutes to soak.

Step 2Add all remaining loaf ingredients to bowl and mix until well combined and uniform. Add additional half & half as needed until the consistency is very wet but still able to form a loaf.

Step 3Divide the mixture in half and place each in a 9 x 5 loaf pan. Form into even loaves.

Step 4Mix all glaze ingredients and pour half over each loaf. Bake for 45-60 minutes until juice runs clear. Let sit for 10 minutes before slicing.
