If you're like me you like foods with a robust flavor. And that's just what this recipe has. I love the crunchiness of the walnuts and the celery too. It makes a nice light summer sandwich. Hope you all enjoy.

precut chicken breast chunks
2 Tbsp
mccormick perfect pinch rotisserie chicken seasoning
1/4 c
chopped onion
2-3 Tbsp
olive oil
1/4 c
chopped celery
1/4 c
chopped walnuts
1/4 c
finely chopped tomato
2 Tbsp
grated parmesan cheese
2-3 Tbsp
grated asiago cheese
3/4 c

How to Make Roasted Chicken Salad with Walnuts


  • 1preheat oven to 350 degrees. place chicken chunks in medium bowl. Sprinkle with McCormick seasoning. mix thoroughly
  • 2Put 2-3 Tablespoons olive oil in baking pan. place chicken chuncks in pan and cook in oven for 35 minutes.
  • 3Remove chicken from oven and chop into small pieces. Place in medium size bowl. Add onions, tomatoes, celery, walnuts. Mix well.
  • 4If desired sprinkle a little bit of the McCormack seasoning into mayonnaise. Mix into chicken mixture. add more mayonnaise if needed.
  • 5Enjoy alone or on your favorite bun or bread.
