When you want a taco salad, but want it to be as healthy as possible, this is it!

Ingredients

  • 1/2 cup ready made salsa
  • 2 tablespoons light sour cream
  • 1/2 teaspoon canola oil
  • 1 - onion, chopped
  • 2 teaspoons minced garlic
  • 8 ounces ground turkey breast
  • 1 - plum tomato, diced
  • 1/2 cup black beans, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups shredded romaine lettuce
  • 1/2 cup reduced-fat, shredded mexican style cheese

How To Make the best healthy taco salad

  • Step 1
    In lg bowl, stir together salsa and sour cream, set aside. Heat oil in lg skillet over medium heat. Add onion and garlic, cook 2 mins.
  • Step 2
    Add ground turkey, cook until browned. Add tomatoes, beans, cumin, and chili powder. Cook 2 mins, stirring. Remove from heat. Stir in 2 tbsp salsa mix.
  • Step 3
    Add lettuce to remaining salsa mix, toss to coat. Divide lettuce between 2 plates. Top w/ turkey mix. Sprinkle w/ cheese.
