1Put 5 cups of water on to boil, meanwhile chop veggies and mushrooms, saute them in olive oil, for 1 to 3 minutes over med high heat. Remove from pan.
2Brown ground turkey in same pan as you cooked the veggies in. Add rice to boiling water, let boil for 20 minutes on med high heat, add 1 pkg of salt free bouillion to water. Add the can of ro tel to cooked ground turkey, add the sauteed vegetables also. Let simmer while rice is cooking.
3When rice is done, drain water, rinse well to remove starch from rice, add the meat mixture with veggies to rice mix well. Goes great with baked or fried chicken.
