Low Fat Slow Cooker Turkey Taco Soup
This is a heart healthy meal and can take a lot of spices just not more salt or fat!
1 lbturkey breast, diced (left over is fine)
1 can(s)dced tomatoes with green chilies
1 can(s)low sodium diced tomatoes, plain
2 can(s)low sodium pinto beans, rinsed
1 can(s)pork and beans, rinsed
1/2 smallonion, chopped
3 clow sodium beef broth or water
2/3 cinstant brown rice
1/2 pkgtaco seasoning mix
8 ozlow fat shredded cheddar cheese
·sour cream, lite if desired
How to Make Low Fat Slow Cooker Turkey Taco Soup
- Add cubed turkey, diced tomatoes and chopped onions to slow cooker. Rinse beans and add to cooker. Stir then add 1 cup low sodium beef broth and 1/2 package Taco Seasoning mix, then set slow cooker on high for 4 hours or longer. I did this for 4 hrs.
- 30-60 minutes prior to serving add the instant brown rice and remaining water or beef broth and let cook till rice is tender and soup is hot.
- To serve: serve chili into bowls and top with 1/4 cup of shredded cheddar cheese to bowls and top with light sour cream if desired.
