This recipe is quick to put together. It uses the leftover turkey meat from the Holidays. You may also use ground turkey in place of the turkey breast meat. This is a heart healthy meal and can take a lot of spices just not more salt or fat!

Ingredients

  • 1 pound turkey breast, diced (left over is fine)
  • 1 can dced tomatoes with green chilies
  • 1 can low sodium diced tomatoes, plain
  • 2 cans low sodium pinto beans, rinsed
  • 1 can pork and beans, rinsed
  • 1/2 small onion, chopped
  • 3 cups low sodium beef broth or water
  • 2/3 cup instant brown rice
  • 1/2 package taco seasoning mix
  • 8 ounces low fat shredded cheddar cheese
  • - sour cream, lite if desired

How To Make low fat slow cooker turkey taco soup

  • Step 1
    Add cubed turkey, diced tomatoes and chopped onions to slow cooker. Rinse beans and add to cooker. Stir then add 1 cup low sodium beef broth and 1/2 package Taco Seasoning mix, then set slow cooker on high for 4 hours or longer. I did this for 4 hrs.
  • Step 2
    30-60 minutes prior to serving add the instant brown rice and remaining water or beef broth and let cook till rice is tender and soup is hot.
  • Step 3
    To serve: serve chili into bowls and top with 1/4 cup of shredded cheddar cheese to bowls and top with light sour cream if desired.
