Great take on regular meat loaf with a twist. It is done in a cast iron skillet instead of a loaf pan

How To Make cast iron skillet meatloaf
-
Step 1In large bowl combine all ingredients. Form into ball and place in skillet, leaving 1/4 inch of open space all around perimeter of skillet. Place in oven and pour water in skillet, enough to come halfway up the pan. Cook for about an hour and a half, or until meat is 170 degrees. Spread bbq sauce (ketchup if you dont like sauce) and brush it on, put back in oven for 15 minutes. Try not to burn your lips on the pan while you are licking off the stuff that got stuck, or do what I did, wait for it to cool and attack it with a spoon.
