One word describes these tacos: AWESOME! This recipe evolved from my "Zesty Pineapple Slaw" recipe.

Ingredients

  • 3 tablespoons fat-free plain greek yogurt
  • 3 tablespoons mayonnaise
  • 3 tablespoons lime juice
  • 1 tablespoon chipotle tobasco
  • - salt and pepper to taste
  • 1 16-oz bags cole slaw mix
  • 1 bunch cilantro, chopped
  • - onion (optional)
  • 1 20-oz cans pineapple tidbits, well drained
  • 1 can tiny shrimp
  • 1 8-oz bags italian five-cheese blend
  • 1 18-ct boxes taco shells
  • - avocados (optional)

How To Make shrimp tacos

  • Step 1
    Mix first five ingredients in a small mixing bowl with a whisk.
  • Step 2
    Combine slaw mix, cilantro, pineapple, shrimp, and cheese in a large bowl and toss well (or omit shrimp and cheese to top just prior to serving).
  • Step 3
    Pour dressing mixture over the slaw mix and stir until coated.
  • Step 4
    Serve in taco shells.
  • Step 5
    Serve with sliced avocados, if desired.
