This recipe evolved from my "Zesty Pineapple Slaw" recipe.
3 Tbspfat-free plain greek yogurt
1 Tbspchipotle tobasco
·salt and pepper to taste
1 16-oz bag(s)cole slaw mix
1 bunchcilantro, chopped
1 20-oz can(s)pineapple tidbits, well drained
1 can(s)tiny shrimp
1 8-oz bag(s)italian five-cheese blend
1 18-ct boxtaco shells
How to Make Shrimp Tacos
- Mix first five ingredients in a small mixing bowl with a whisk.
- Combine slaw mix, cilantro, pineapple, shrimp, and cheese in a large bowl and toss well (or omit shrimp and cheese to top just prior to serving).
- Pour dressing mixture over the slaw mix and stir until coated.
- Serve in taco shells.
- Serve with sliced avocados, if desired.
