This recipe evolved from my "Zesty Pineapple Slaw" recipe.

Ingredients

3 Tbsp
fat-free plain greek yogurt
3 Tbsp
mayonnaise
3 Tbsp
mayonnaise
1 Tbsp
chipotle tobasco
salt and pepper to taste
1 16-oz bag(s)
cole slaw mix
1 bunch
cilantro, chopped
1 20-oz can(s)
pineapple tidbits, well drained
1 can(s)
tiny shrimp
1 8-oz bag(s)
italian five-cheese blend
1 18-ct box
taco shells
avocados (optional)

Step-By-Step

1Mix first five ingredients in a small mixing bowl with a whisk.
2Combine slaw mix, cilantro, pineapple, shrimp, and cheese in a large bowl and toss well (or omit shrimp and cheese to top just prior to serving).
3Pour dressing mixture over the slaw mix and stir until coated.
4Serve in taco shells.
5Serve with sliced avocados, if desired.
