skinny shrimp and broccoli

This is a recipe I tweaked to make it low fat by reducing the oil etc. in the recipe. I also tweaked the ingredients to make it more flavorful. My family is very happy with this dish,and I was told to add it to our menu. Ha ha ha

Ingredients

  • 1 tablespoon canola oil
  • 1 - medium onion halved and sliced thin
  • 2 - cloves garlic grated
  • 3 cups broccoli floretts
  • 2 cups chopped mushrooms
  • 1 pound frozen cooked shrimp thawed
  • 1 tablespoon tamari soy sauce
  • 2 teaspoons grated fresh ginger root
  • 1 tablespoon hoisin sauce
  • 1/2 cup chicken stock
  • 1 teaspoon corn starch
  • 1 pinch black pepper
  • 2 cups cooked jasmine rice ,or white rice.-cook and follow directions

How To Make skinny shrimp and broccoli

  • Step 1
    Heat non stick skillet add the oil. Get the pan hot and add the onion,and cook until transparent. Add the garlic. Stir continuously until light brown.
  • Step 2
    Add the Broccoli to pan with onion. Add 1/4 cup of the chicken stock. Cook until Broccoli is dark green.
  • Step 3
    Add the Ginger,and stir in. Mix the soy sauce,Hoisin sauce with the remaining chicken stock. add the corn starch to it,and blend well.
  • Step 4
    Pour mixture over the Brocolli,and stir in thawed Frozen shrimp. Cook just until shrimp is hot. Season with pepper.
  • Step 5
    Serve over rice.
