Shrimp is my favorite seafood and this is one of the ones most often made.....

1 c
quick cooking grits
2 Tbsp
olive oil, extra virgin
1 1/2 lb
large deveined and peeled shrimp
2 tsp
cajun spice
salt and pepper to taste
3 Tbsp
fresh lime juice
3 clove
finely shredded
1 c
frozen corn thawed
1 bunch
spinach, thick stems diacarded

How to Make Shrimp, Spinach and Grits


  • 1Cook grits according to package directions...set aside.
  • 2Cut off the thick stems of the spinach and break up or cut up the spinach into medium size pieces. In large skillet heat the oil, season the shrimp with the cajun spice and salt and pepper. cook for 2 to 3 minutes each side until shrimp is opague and pink..remove skillet from heat and add the lime juice and toss to coat, transfer to bowl.
  • 3Wipe out the skillet add the olive oil and garlic and cook for 2 minutes,,add the shrimp and corn and cook until heated through add the spinch and toss cooking for 2 minutes combine all and serve over cooked grits
