Ingredients

  • 4 - bluefish tuna steaks (6 to 8 ounces each)
  • MARINADE INGREDIENTS
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/8 cup djon mustard
  • 1/4 cup clover honey
  • 1-2 tablespoon liquid smoke (optional)
  • 1 tablespoon ground ginger
  • 1 teaspoon curry powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon or lime juice

How To Make grilled bluefish tuna (sallye)

  • Step 1
    Whisk all ingredients for marinade in mixing bowl unti you have a smooth well blended liquid. Place tuna steaks in shallow dish and brush generously on both sides with marinade. Place in fridge for at least one hour, but not more than two hours, turning once. NOTE: NEVER MARINATE FISH FOR OVER TWO HOURS OR IT WILL BEGIN TO BREAK DOWN AND BECOME MUSHY.
  • Step 2
    When ready to cook, preheat grill to medium high heat. NOTE: If you don't have a grill, you can cook these in a heavy skillet (cast iron is good) or on an electric griddle. Remove from fridge and give another brush with marinade. Place steaks skin side up on grill and cook 3-5 minutes, then carefully turn steaks. Cook skin side down for 3-5 more minutes. Check frequently to avoid overcooking. Fish is done when you can flake it with a fork. Plate and serve immediately
