Ingredients
- 4 pounds short ribs, fat trimmed
- 1 tablespoon chili powder
- 1 tablespoon light brown sugar
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 2 cups mesquite wood chips
- 1 - onion, diced
- 2 teaspoons minced garlic
- 1 tablespoon canola oil
- 1-1/2 cup ketchup
- 1/4 cup worcestershire sauce
- 1/4 cup brewed coffee
- 1/4 cup red wine vinegar
- 2 tablespoons light brown sugar
- 1 - chipotle pepper in adobo sauce, chopped
- 2 teaspoons dry mustard
- 1/2 teaspoon salt
How To Make spiced rubbed smoky ribs

Step 1Heat oven to 350. Put ribs in a roasting pan. In bowl, combine chili powder, 1 tbsp brown sugar, 1 tsp salt, garlic and onion powders, cumin, pepper and cayenne pepper. Sprinkle over ribs, press in w/ fingers. Meanwhile soak wood chips in water 30 mins, drain, place in bottom of grill.

Step 2Cook ribs 1-1/2 hrs. Drain of any fat. In saucepan cook onion and garlic in oil for 5 mins. Stir in ketchup, worcestershire sauce, coffee, vineagr, 2 tbsp brown sugar, chipotle pepper, dry mustard and 1/2 tsp salt.

Step 3Bring to a boil, reduce heat and simmer 30 mins, stirring occasionally. Heat grill to medium. Place ribs on grill. Grill 15 mins, turning once. Serve w/ sauce.
