1Heat oven to 350. Put ribs in a roasting pan. In bowl, combine chili powder, 1 tbsp brown sugar, 1 tsp salt, garlic and onion powders, cumin, pepper and cayenne pepper. Sprinkle over ribs, press in w/ fingers. Meanwhile soak wood chips in water 30 mins, drain, place in bottom of grill.
2Cook ribs 1-1/2 hrs. Drain of any fat. In saucepan cook onion and garlic in oil for 5 mins. Stir in ketchup, worcestershire sauce, coffee, vineagr, 2 tbsp brown sugar, chipotle pepper, dry mustard and 1/2 tsp salt.
3Bring to a boil, reduce heat and simmer 30 mins, stirring occasionally. Heat grill to medium. Place ribs on grill. Grill 15 mins, turning once. Serve w/ sauce.
