This is probably one of my very favorite meals, harking back to childhood. One of the best comfort foods in the world! Of course my mother never heard of a crock pot when I was growing up--hers was baked in the oven. I have tweaked this recipe just a bit to make it even more luscious.

Ingredients

  • 6 medium
    red potatoes, thinly sliced
  • 2 medium
    onions, finely chopped
  • 1 1/2 c
    fully cooked ham, cubed
  • 2 Tbsp
    butter
  • 2 Tbsp
    all purpose flour
  • 1 tsp
    ground mustard
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 can(s)
    (10-3/4 oz.) condensed cream of celery soup, undiluted
  • 1 1/3 c
    half and half
  • 1 c
    (4 oz.) shredded cheddar cheese (optional)

How to Make ULTRA CREAMY HAM & POTATOES

Step-by-Step

  1. In a slow cooker, layer the potatoes, onions, and ham. In a saucepan, melt butter. Stir in flour, mustard, salt and pepper until smooth.
  2. In a bowl, combine the soup and half and half; gradually stir into flour mixture. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Pour over the ham.
  3. Cover and cook on LOW for 8-9 hours or until potatoes are tender. If desired, sprinkle with cheese before serving.
