ultra creamy ham & potatoes
This is probably one of my very favorite meals, harking back to childhood. One of the best comfort foods in the world! Of course my mother never heard of a crock pot when I was growing up--hers was baked in the oven. I have tweaked this recipe just a bit to make it even more luscious. Ingredients
- 6 medium red potatoes, thinly sliced
- 2 medium onions, finely chopped
- 1 1/2 cups fully cooked ham, cubed
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 1 teaspoon ground mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 can (10-3/4 oz.) condensed cream of celery soup, undiluted
- 1 1/3 cups half and half
- 1 cup (4 oz.) shredded cheddar cheese (optional)
How To Make ultra creamy ham & potatoes

Step 1In a slow cooker, layer the potatoes, onions, and ham. In a saucepan, melt butter. Stir in flour, mustard, salt and pepper until smooth.

Step 2In a bowl, combine the soup and half and half; gradually stir into flour mixture. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Pour over the ham.

Step 3Cover and cook on LOW for 8-9 hours or until potatoes are tender. If desired, sprinkle with cheese before serving.
