spaghetti with sausage ragù

My local supermarket has super promotion on canned goods a couple of times per year. This is when I look for better quality tomatoes and meat stock. I made this easy pasta dish tonight and just savored how much a decent canned tomato can do for a dish.

Ingredients

  • 1 can 28 oz. crushed tomatoes (tuttorosso new world style)
  • 1 can 8oz. tomato sauce (of same brand)
  • 1 can 6 oz. tomato paste (of same brand)
  • 1 pound loose sweet italian sausage
  • 1 large red onion (finely diced)
  • 2 teaspoons minced garlic (from a jar)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 - dried bay leaf
  • - sea salt (i added a half teaspoon)
  • - granulated sugar (i added a tablespoon)
  • 1 pound dry pasta of your choice (i love barilla thick spaghetti)

How To Make spaghetti with sausage ragù

  • Step 1
    In a medium sauce pan, heat a tablespoon of olive oil on medium high heat. Add garlic and tomato paste and fry them gently for a few minutes.
  • Step 2
    Stir in crushed tomatoes and tomato sauce. Add oregano, basil and bay leaf. Stir to combine well then cover sauce. Reduce heat to medium.
  • Step 3
    Heat the remaining tablespoon of olive oil in a 10-inch skillet (I used well-seasoned cast iron) on medium-high heat. Dice the onion and add to the skillet and cook until translucent. Stir the sauce in the other pot carefully. It will splatter. Add sausage to skillet with onions and fry thoroughly until meat is well browned - about 10 to 12 minutes. Stir the tomato sauce a few times throughout.
  • Step 4
    When sausage finishes cooking, start the water for cooking the pasta. (Follow the package directions.) Remove tomato sauce from the heat and add the sausage & onions to it. Stir thoroughly and cover. Return ragù to low heat and let it simmer gently while pasta is being prepared.
  • Step 5
    Check sauce for seasoning and add salt/sugar if desired. Once pasta is cooked and drained, serve immediately topped with ragù.
