I gave my husband 3 choices for dinner today, Bean Soup, Buffalo Ranch Pork Chops or Left over Pork Roast. He chose the Pork Roast. So I had to think of a creative way to reinvent it, He loves Pork Roast & I love Bacon so I figured I would combine the two together, in a Barbeque Sauce, & serve it on Whole Wheat Toasted Bread, along with Broccoli Slaw. I had enough to make 6 hearty sandwiches, & there was even some left over. I added the onions & bell pepper for flavor & then basil & garlic with Sweet Baby Ray's B B Q Sauce & that was our dinner. Simple Easy Quick & Tasty REMIX.

Ingredients

6 slices pork loin roast (about 1 3/4 pounds)
2 large onions, chopped
1 large green bell pepper, chopped
2 tablespoons canola or olive oil
1 1/4 cups real bacon bits
2-2 1/2 cups barbeque sauce (i used sweet baby rays)
2 teaspoons each dried sweet basil , granulated garlic powder
- toasted buns or sliced bread for each sandwich

How To Make remix b b q pork roast with bacon & onions

Step 1

I created this meal to satisfy my husband. I was sure he would prefer Bean soup or Pork Chops, but he suggested the left over pork, and I must admit it was much quicker to make, and it really did taste good.

Step 2

Chop onions & bell peppers. Add oil to skillet, heat over medium high heat, and add the chopped peppers and onions. Cook for about 5-6 minutes until translucent.
Step 3

Cube left over pork with sharp knife.
Step 4

When the veggies are translucent add the cubed pork, and stir to mix together.
Step 5

Season with garlic powder & sweet basil & stir to blend together..
Step 6

Now add the real bacon bits.
Step 7

Stir to mix and continue cooking.
Step 8

Add Barbeque sauce
Step 9

Stir to mix and continue cooking until mixture is heated through, about 25 minutes total.
Step 10

Toast Buns or bread and serve as desired with your favorite salad or slaw.
