I was given this recipe 20 years ago, and was told to use Sangria. I have never, but always used Merlot. So give it a whirl and see what happens.

Ingredients

  • 2+ pounds pork chops, pork loin chops, 4 - 6 chops
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 tablespoons worcestershire sauce
  • 1 pound pasta - fetticine, lingquine or spaghetti
  • 1 cup red wine - merlot, sangria etc
  • 1 cup sour cream
  • - salt and pepper

How To Make purple pork chops

  • Step 1
    Add to a heated, heavy skillet, the olive oil and Worcestershire sauce. Allow to heat up to frying temp.
  • Step 2
    Add chops, browning for 3-4 minutes. Salt and Pepper the chops. Turn the chops over, salt and pepper this side, add the garlic to the pan, and cover chops with the diced onion. Cook for another 3-4 minutes, while mixing up the red wine and sour cream in a bowl with a whisk. Pour this sauce over the chops, cover and simmer on low heat for 45 minutes to 1 hour. Prepare pasta. Mix the pasta and chops together. Serve.
  • Step 3
    Note: Sauce may seem a little runny, but the leftover pasta will absorbed it, making the leftover's even better than the meal.
