This makes for an easy Sunday dinner. I always use left over ham, but you can use thickly sliced deli ham.

1 lb
elbow macaroni
1 Tbsp
canola oil
red onion, thinly sliced
1 tsp
minced garlic
red bell pepper, thinly sliced
14 oz can chopped tomatoes
9 oz
diced ham
3 Tbsp
chicken broth
2 tsp
dried oregano
salt and pepper to taste
1 c
bread crumbs, i used italian-style
3 Tbsp
grated parmesan cheese
2 Tbsp
melted butter

How to Make Pasta and ham bake


  • 1Cook pasta as directed, drain. Heat oven to 400. Spray a 2-quart casserole dish w/ cooking spray. Heat oil in saucepan over medium heat. Add onion, garlic and red bell pepper. Cook, stirring for 5 mins.
  • 2Add tomatoes, ham, broth,and oregano. Bring to boil. Simmer for 3 mins. Remove from heat. Stir in macaroni. Season w/ salt and pepper.
  • 3Spoon into baking dish. In small bowl, combine bread crumbs, parmesan cheese and butter. Sprinkle bread crumbs over casserole. Place casserole dish on a baking sheet. Bake 20 mins, or until bubbly.
