This makes for an easy Sunday dinner. I always use left over ham, but you can use thickly sliced deli ham.

Ingredients

  • 1 lb
    elbow macaroni
  • 1 Tbsp
    canola oil
  • 1
    red onion, thinly sliced
  • 1 tsp
    minced garlic
  • 1
    red bell pepper, thinly sliced
  • 1
    14 oz can chopped tomatoes
  • 9 oz
    diced ham
  • 3 Tbsp
    chicken broth
  • 2 tsp
    dried oregano
  • ·
    salt and pepper to taste
  • 1 c
    bread crumbs, i used italian-style
  • 3 Tbsp
    grated parmesan cheese
  • 2 Tbsp
    melted butter

How to Make Pasta and ham bake

Step-by-Step

  1. Cook pasta as directed, drain. Heat oven to 400. Spray a 2-quart casserole dish w/ cooking spray. Heat oil in saucepan over medium heat. Add onion, garlic and red bell pepper. Cook, stirring for 5 mins.
  2. Add tomatoes, ham, broth,and oregano. Bring to boil. Simmer for 3 mins. Remove from heat. Stir in macaroni. Season w/ salt and pepper.
  3. Spoon into baking dish. In small bowl, combine bread crumbs, parmesan cheese and butter. Sprinkle bread crumbs over casserole. Place casserole dish on a baking sheet. Bake 20 mins, or until bubbly.
