My mom used to make this all the time when I was a kid. Velveeta was cheap to use for cheese and she used left over ham from a ham dinner. She always kept canned potatoes in the house for these kind of casseroles. I always enjoyed this dish, and it always brings back such great memories.
We never had a lot of money and ate casseroles quite a bit, lol.

Ingredients

1/2 stickbutter

2 Tbspflour

1 cmilk

1/2 cmilk

1 lbvelveeta cheese, cubed

16 ozfrozen green beans, thawed

2 can(s)whole potatoes, drained, quartered

4 ccooked, diced ham

1 tsponion powder

1/2 tspeach, salt & pepper
How to Make New England style ham & cheese casserole
- Heat oven to 375. Lightly spray a 5-quart casserole dish w/ cooking spray. In lg pot, melt butter over medium heat.
- Stir in flour until smooth. Stir in milk and cheese cubes. Stir until cheese is melted and mix is thickened.
- Remove from heat. Stir in remaining ingredients. Spoon into dish. Bake 50 mins, or until bubbly.
