new england style ham & cheese casserole

My mom used to make this all the time when I was a kid. Velveeta was cheap to use for cheese and she used left over ham from a ham dinner. She always kept canned potatoes in the house for these kind of casseroles. I always enjoyed this dish, and it always brings back such great memories. We never had a lot of money and ate casseroles quite a bit, lol. It's become a staple in new England.

Ingredients

  • 1/2 stick butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup milk
  • 1 pound velveeta cheese, cubed
  • 16 ounces frozen green beans, thawed
  • 2 cans whole potatoes, drained, quartered
  • 4 cups cooked, diced ham
  • 1 teaspoon onion powder
  • 1/2 teaspoon each, salt & pepper

How To Make new england style ham & cheese casserole

  • Step 1
    Heat oven to 375. Lightly spray a 5-quart casserole dish w/ cooking spray. In lg pot, melt butter over medium heat.
  • Step 2
    Stir in flour until smooth. Stir in milk and cheese cubes. Stir until cheese is melted and mix is thickened.
  • Step 3
    Remove from heat. Stir in remaining ingredients. Spoon into dish. Bake 50 mins, or until bubbly.
