kidney beans and kielbasa stew
One of the first recipes I learned when I began to cook. Great on really freezing nights or that first cold snap during the fall!

Ingredients
- 1 pound dried kidney beans (soaked overnight in water)
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 1 pound smoked pork or bacon, chopped like lardons
- 1 pound kielbasa sausage, chopped into bite size pieces
- - salt and pepper to taste
- - about 10 cups of water give or take
How To Make kidney beans and kielbasa stew

Step 1Drain kidney beans and place in a dutch oven.

Step 2Add everything except for the sausage. Sausage will be added at the very end.

Step 3Cook on high heat until it boils. Lower temperature to simmer. Cook until kidney beans are bite tender and the stew has become thick. Add more water if necessary.

Step 4Add the sausage and stir stew. Turn off heat and serve.

Step 5I usually serve this with steamed rice and jalapeño cornbread.
