I got this recipe from my late husband's cousin who got it from a cooking school. My family and friends just love it. It is quick and easy and can be either a entree or a salad.

  • 1 lb
    penne or bowtie pasta
  • 3 Tbsp
    olive oil, extra virgin
  • 1 c
    sliced red onion
  • 3 tsp
    garlic, minced
  • 2 tsp
    italian seasoning
  • 1 can(s)
    diced italian tomatoes
  • 3 Tbsp
    fresh basil, chiffonade
  • 3 oz
    prosciutto, cut into thin strips
  • 1 c
    frozen peas, thawed
  • 1/3 c
    grated grana padano cheese
  • 1/4 c
    pine nuts, toasted

How to Make Italian Pasta Salad


  1. Cook pasts according to package directions.
  2. While pasta is cooking, heat olive oil in a large saute pan over medium-high heat. Add onions and garlic; saute 1 to 2 minutes. Add Italian seasoning and tomatoes; simmer 5 minutes. Drain pasta and add with the tomatoes to the seasonings in the pan. Stir to coat.
  3. Stir in basil, proscuitto and peas. Cook for an additional 2 to 3 minutes just to heat through. Sprinkle with cheese and pine nuts. Serve immediately.
