I got this recipe from my late husband's cousin who got it from a cooking school. My family and friends just love it. It is quick and easy and can be either a entree or a salad.

1 lb
penne or bowtie pasta
3 Tbsp
olive oil, extra virgin
1 c
sliced red onion
3 tsp
garlic, minced
2 tsp
italian seasoning
1 can(s)
diced italian tomatoes
3 Tbsp
fresh basil, chiffonade
3 oz
prosciutto, cut into thin strips
1 c
frozen peas, thawed
1/3 c
grated grana padano cheese
1/4 c
pine nuts, toasted

How to Make Italian Pasta Salad


  • 1Cook pasts according to package directions.
  • 2While pasta is cooking, heat olive oil in a large saute pan over medium-high heat. Add onions and garlic; saute 1 to 2 minutes. Add Italian seasoning and tomatoes; simmer 5 minutes. Drain pasta and add with the tomatoes to the seasonings in the pan. Stir to coat.
  • 3Stir in basil, proscuitto and peas. Cook for an additional 2 to 3 minutes just to heat through. Sprinkle with cheese and pine nuts. Serve immediately.
