italian pasta salad
I got this recipe from my late husband's cousin who got it from a cooking school. My family and friends just love it. It is quick and easy and can be either a entree or a salad.

Ingredients
- 1 pound penne or bowtie pasta
- 3 tablespoons olive oil, extra virgin
- 1 cup sliced red onion
- 3 teaspoons garlic, minced
- 2 teaspoons italian seasoning
- 1 can diced italian tomatoes
- 3 tablespoons fresh basil, chiffonade
- 3 ounces prosciutto, cut into thin strips
- 1 cup frozen peas, thawed
- 1/3 cup grated grana padano cheese
- 1/4 cup pine nuts, toasted
How To Make italian pasta salad

Step 1Cook pasts according to package directions.

Step 2While pasta is cooking, heat olive oil in a large saute pan over medium-high heat. Add onions and garlic; saute 1 to 2 minutes. Add Italian seasoning and tomatoes; simmer 5 minutes. Drain pasta and add with the tomatoes to the seasonings in the pan. Stir to coat.

Step 3Stir in basil, proscuitto and peas. Cook for an additional 2 to 3 minutes just to heat through. Sprinkle with cheese and pine nuts. Serve immediately.
