italian pasta salad

I got this recipe from my late husband's cousin who got it from a cooking school. My family and friends just love it. It is quick and easy and can be either a entree or a salad.

Ingredients

  • 1 pound penne or bowtie pasta
  • 3 tablespoons olive oil, extra virgin
  • 1 cup sliced red onion
  • 3 teaspoons garlic, minced
  • 2 teaspoons italian seasoning
  • 1 can diced italian tomatoes
  • 3 tablespoons fresh basil, chiffonade
  • 3 ounces prosciutto, cut into thin strips
  • 1 cup frozen peas, thawed
  • 1/3 cup grated grana padano cheese
  • 1/4 cup pine nuts, toasted

How To Make italian pasta salad

  • Step 1
    Cook pasts according to package directions.
  • Step 2
    While pasta is cooking, heat olive oil in a large saute pan over medium-high heat. Add onions and garlic; saute 1 to 2 minutes. Add Italian seasoning and tomatoes; simmer 5 minutes. Drain pasta and add with the tomatoes to the seasonings in the pan. Stir to coat.
  • Step 3
    Stir in basil, proscuitto and peas. Cook for an additional 2 to 3 minutes just to heat through. Sprinkle with cheese and pine nuts. Serve immediately.
