- 1 - pork tenderloin 1 1/2 pounds
- 1/2 cup all-purpose flour
- 2 - eggs lightly beaten
- 1 1/2 cups dry breadcrumbs
- 1/4 cup parmigiano-reggiano, grated
- 1 1/2 - teaspoon salt
- 1/4 cup canola oil
- 1 1/2 teaspoons pepper

Step 1cut pork in diagonal slices 8 recommended. pound each to 1/4-inch thickness. place the flour and eggs in separate shallow bowls. in another shallow bowl, combine the breadcrumbs, cheese, salt, and pepper. dip pork in the flour, eggs, then the breadcrumb mixture.

Step 2in a large skillet, fry pork cutlets in oil on medium high heat for 2 or 3 minutes on each side or until there crunchy and the juices run clear. remove cool slightly and serve.
