Fresh is best, what else can I say! This would make an absolute delicious vegetarian dish, without the sausage of course.

Ingredients

  • 1 pound italian sausage or 5 links
  • 10 medium tomatoes
  • 1 teaspoon dried italian seasoning
  • 3 cloves fresh garlic
  • 1/4 cup sweet onion
  • 3 - fresh basil leaves
  • 2 teaspoons vinegar
  • 1/2-1 cup hot water
  • 2 teaspoons granulated sugar
  • 1 teaspoon sea salt
  • 2 tablespoons tomato paste
  • 1 teaspoon cracked black pepper

How To Make garden fresh pasta sauce with italian sausage

  • Step 1
    Place tomatoes in a pot of hot simmering water for about 1 minute, remove. Allow to cool then peel the skin off. Place in food processor.
  • Step 2
    In food processor also put three cloves of fresh grated garlic, 1/4 c chopped onion, three fresh basil leaves, 2 tsp. vinegar, and 1 tsp dried Italian seasoning and about 1/2-1 c. of hot water you used to for tomatoes. Puree.
  • Step 3
    Place sausage in large skillet. If using Italian sausage in casing, remove casing and break up sausage into skillet. Cook and break up into small pcs. till partially browned. Add tomato sauce to sausage, add salt, pepper and sugar. Simmer for about 30 min. Taste, re-season if necessary.
  • Step 4
    Since I don't always plan meals a week in advance, I buy fresh basil and freeze it. Then just pop it into the processor, or chop, andit has such amazing flavor, I will never use dried basil again.
