fast fannie's gyro
I fell in love with gyros over 3 decades ago while visiting my sister Pam in Richmond Va. I've made them before, but I think I've finally perfected an awsome blend of meats and spices to suite my palate. This is a winner and keeper. This was so much better than what I've had at restaurants. Cooking with Love & Passion. sw :)

Ingredients
- GYRO MEAT
- 1 pound ground lamb
- 1/2 pound ground sirloin
- 1/2 pound ground pork
- 1 medium onion, grated
- 5 - garlic cloves, grated
- 2 tablespoons mint, fresh & chopped
- 1 tablespoon greek herbs- oregano, cumin, parsley
- - lemon zest, grated
- 2 teaspoons smoked sea salt
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cracked black pepper
- 2 tablespoons olive oil, extra virgin
- CUCUMBER FETA YOGURT SAUCE
- 16 ounces greek whole milk yogurt
- 3 ounces feta cheese, crumnbled
- 1 - english cucumber, grated and drained
- 2-3 - garlic cloves, grated
- - juice from 1 lemon
- 1 tablespoon dill, fresh & chopped
- 1/2 tablespoon italian parsley, chopped
- - smoked sea salt & cracked black pepper to taste
- OTHER INGREDIENTS
- - flat bread, lettuce, tomatoes, onions
How To Make fast fannie's gyro

Step 1In a medium bowl, combine all the gyro meat ingredients. **Meanwhile, combine Cucumber Feta & Yogurt Sauce ingredients together in a small mixing bowl. Cover & refrigerate**

Step 2Mix gyro meat ingredients with a mixer until all the seasoning are evenly distributed and the gyro meat mixture is pasty and slightly sticky.

Step 3With oiled hands, form gyro meat mixture into a log and place on a oiled sheet pan. Cover and refrigerate for at least 2 hours.

Step 4Bake in a 325 degree preheated oven for 45-50 minutes, until log is firm and cooked through.

Step 5Slice gyro in strips, onions & tomatoes. Warm flat bread on grill pan or in microwave.

Step 6Build you gyro: flat bread, sauce, lettuce, gyro slices, tomato, onions and top with more sauce. Wrap in aluminum foil and serve
