This dish is the result of cleaning out my pantry and freezer in preparation for the New Year. It's very easy to make, doesn't take long to cook, and tastes delicious! I will make this again!

Ingredients

  • 2 tablespoons butter
  • 1 large green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 pound smoked sausage, cut in 1-inch rounds
  • 2 cups quick-cooking rice
  • 1 jar (24 oz.) any type pasta sauce (i used tomato, onion & garlic)
  • 1 teaspoon salt, or to taste
  • 1 small pinch crushed red pepper, if desired

How To Make ellen's rice & sausage veggie mix

  • Step 1
    Melt butter in a medium saucepan over medium-high heat. Add bell pepper, onion, and celery. Saute, stirring frequently, until vegetables start to become translucent. Add garlic and saute about 1 minute more.
  • Step 2
    Meanwhile, in a large skillet, brown sausage rounds. Add vegetables to skillet and combine. Add rice and pasta sauce and mix well. Shake in a pinch of crushed red pepper, if desired.
  • Step 3
    Bring mixture to boil over medium-high heat. Lower to simmer, cover, and cook about 20 minutes, or until rice is thoroughly cooked and liquid is absorbed.
