easy ham & cheese frittata
With this easy and filling dish, you can use either deli ham or left-over ham. I tend to use the left-over ham from Christmas that I freeze.

Ingredients
- 2 tablespoons canola or vegetable oil
- 6 - eggs
- 1/4 pound sliced ham, cut into strips
- 1/4 cup shredded mozzarella cheese, i used reduced fat
- 1/2 teaspoon chopped chives
- 1/2 teaspoon chopped parsley
- - salt & pepper to taste
How To Make easy ham & cheese frittata

Step 1Heat oven to 425. In lg bowl,whisk the eggs together. Heat oil in lg cast-iron skillet over medium heat.

Step 2Pour eggs into pan. Layer w/ ham, cheese, a pinch of salt, a pinch of pepper and the herbs. Cook 5 mins. Transfer to oven and bake 10 mins, or until eggs are set.
