With this easy and filling dish, you can use either deli ham or left-over ham. I tend to use the left-over ham from Christmas that I freeze.

    canola or vegetable oil

    sliced ham, cut into strips
  • 1/4 c
    shredded mozzarella cheese, i used reduced fat
  • 1/2 tsp
    chopped chives
  • 1/2 tsp
    chopped parsley
  • ·
    salt & pepper to taste

How to Make Easy ham & cheese frittata


  1. Heat oven to 425. In lg bowl,whisk the eggs together. Heat oil in lg cast-iron skillet over medium heat.
  2. Pour eggs into pan. Layer w/ ham, cheese, a pinch of salt, a pinch of pepper and the herbs. Cook 5 mins. Transfer to oven and bake 10 mins, or until eggs are set.
