dr pepper sauerkraut w/smoked sausage & onions
You may not want to believe this but yes I made Sauerkraut & cooked it in Dr Pepper it was so good. I went to make another one pot wonder, & discovered I was out of Apple Juice. Had this Dr Pepper left over, when I had wanted to make Dr Pepper Glazed Ham, but made Kahlua Glazed Ham instead, so it was sitting in the pantry & decided to use it for the apple juice. The caramel color complimented the brown sugar nicely, & the flavors was really very tasty. A great accidental substitute for the apple juice. My husband walked in the house & marveled at the aroma of the kraut. He loved it.

Ingredients
- 4 cans sauerkraut (14.5 oz each)
- 1 cup light brown sugar (or to your taste)
- 16 ounces dr pepper soda (or enough to almost cover kraut)
- 3 medium apples cored & sliced (i used golden delicious)
- 3 medium onions, sliced
- 1/2 stick butter
- 5 cloves garlic, minced
- 42 ounces smoked sausage, (family pac size)
- 2 teaspoons caraway seeds (optional) if desired
- - chopped green onion tops as garnish if desired
How To Make dr pepper sauerkraut w/smoked sausage & onions

Step 1Peel onions and wash & core apples and slice both apples and onions. Add butter to large skillet, I used a 16 inch non stick skillet. Heat over medium high heat.

Step 2Add the sliced apples, minced garlic, and sliced onions to skillet and sauté for about 1 -2 minutes.

Step 3Open sauerkraut and add to a large colander, and rinse, then add to skillet, add caraway seeds if desired.

Step 4Remove sausage from package and make diagonal cuts into sausages with sharp knife. Add the brown sugar to sauerkraut.

Step 5Top Kraut with smoked sausage. ADD ENOUGH DR PEPPER TO COME ALMOST TO TOP OF KRAUT. Cover with a lid and bring to a simmer. Then REMOVE LID and lower heat and cook over low heat until most of the liquid evaporates, stirring as needed to prevent sticking. Cooking for about 45 minutes or so.

Step 6Plate and serve as desired. Add chopped green onion tops over kraut platter as desired just before serving.
