best meat loaf since mashed potatoes
This is one of my favorite recipes from my mother in law--my husband asks me to make it at least once or twice a month. I like the tangy and spicy together..Hope you like it..

Ingredients
- 1/2 cup seasoned bread crumbs
- 2 large eggs,beaten
- 1 cup salsa, you choose the heat
- 1/2 cup nacho cheese chips,crushed
- 1/2 cup each chopped, .bell pepper,onion and celery
- 1 small jalapeño pepper, seeded and chopped
- 6 cloves garlic,minced
- 1/2 teaspoon each pepper,italian seasoning and seasoned salt
- 1 pound each ground pork and ground beef
- CHEESE SAUCE
- 2 tablespoons brown sugar
- 3 tablespoons ketchup
- 1/4 cup shredded cheddar cheese
- topping: - combine the 3 ingredients . set aside

Step 1Heat oven to 350^. Grease a 9x5 inch bread loaf pan;set aside. In a large bowl, combine all ingredients; mixing well to combine evenly. Press into prepared pan.

Step 2Bake,for 1 1/2 to 2 hours or until a meat thermometer reads 160^. 10 minutes before removing from oven spread the cheese sauce over top and bake until cheese melts. Let meat loaf rest in pan for a few minutes before removing to platter and slicing.
