You can buy good Italian sausage at almost any grocery store. The advantages to making your own are three-fold. 1). You know all your ingredients are fresh 2). You can change the spices to suit your personal tastes 3). There are no additional chemicals and preservatives added This is the recipe that my Aunt Josephine taught me, a long time ago… So, are you ready... Well then, let’s get cooking.

Ingredients

  • DRY INGREDIENTS
  • 2 teaspoons parsley
  • 2 teaspoons sea salt
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon fennel seeds
  • 1 teaspoon minced dried onions
  • 1 teaspoon freshly ground, black pepper
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon brown sugar
  • ADDITIONAL INGREDIENTS
  • 2 pounds fresh ground pork
  • 2 tablespoons red wine vinegar

How To Make awesome homemade italian sausage

  • Step 1
    Mix all the dry ingredients together in a large bowl.
  • Step 2
    Add the ground pork, red wine vinegar, and then mix until thoroughly combined.
  • Step 3
    Cover and refrigerate 24 for hours before using.
  • Step 4
    Chef’s Tip: Rather than buy pre-ground pork I choose the type of pork I want and grind my own. If you don’t have a meat grinder, you can always pick your own cuts, and then have your butcher grind it for you.
  • Step 5
    Chef’s Note: Use this Italian sausage as you would any store-bought variety: Pizzas, spaghetti , the sky is the limit. Enjoy.
