I love pizza but like to keep it low cal. This is a nice personal size and good for kids too.

Ingredients

  • 1 - light english muffin
  • 2 tablespoons 2% sharp cheddar cheese
  • 2 tablespoons fat free cottage cheese
  • 2 tablespoons tomato sauce or pizza sauce

How To Make high fiber low fat english muffin pizza

  • Step 1
    Lightly toast the english muffin. Spoon 1 tbsp shredded 2% cheese on each half of the english muffin. Spoon half the cottage cheese on each half of muffin, Spoon half the cottage cheese then the pasta (pizza sauce).
  • Step 2
    You can cook in the oven at this point or you can microwave for 1 minute or less. The cottage cheese melts and gets all gooey, and since the sauce is spread on top of the cheese, it keeps the english muffin from getting soggy.
  • Step 3
    You can add a nice salad or veggies as a side for a meal or add toppings to the pizza like veggies or soy\tofu crumbles in your pasa sauce.
