How to Make High Fiber Low Fat English Muffin Pizza
- Lightly toast the english muffin. Spoon 1 tbsp shredded 2% cheese on each half of the english muffin. Spoon half the cottage cheese on each half of muffin, Spoon half the cottage cheese then the pasta (pizza sauce).
- You can cook in the oven at this point or you can microwave for 1 minute or less. The cottage cheese melts and gets all gooey, and since the sauce is spread on top of the cheese, it keeps the english muffin from getting soggy.
- You can add a nice salad or veggies as a side for a meal or add toppings to the pizza like veggies or soytofu crumbles in your pasa sauce.
