1Lightly toast the english muffin. Spoon 1 tbsp shredded 2% cheese on each half of the english muffin. Spoon half the cottage cheese on each half of muffin, Spoon half the cottage cheese then the pasta (pizza sauce).
2You can cook in the oven at this point or you can microwave for 1 minute or less. The cottage cheese melts and gets all gooey, and since the sauce is spread on top of the cheese, it keeps the english muffin from getting soggy.
3You can add a nice salad or veggies as a side for a meal or add toppings to the pizza like veggies or soytofu crumbles in your pasa sauce.
