I HAD LEFTOVER GRILLED ZUCCHINI FROM LAST NITES DINNER N IT WAS TOO HOT OUT TO PUT OVEN ON SOOOO GRILLED PIZZA IT IS.....THE RICOTTA MADE IT CREAMY ....ONE GREAT PIE :)

Ingredients

  • 1 bag pizza dough.....store bought or ur own
  • 1 cup ricotta
  • 1 medium grilled zucchini, cut into 1" pieces
  • 1/2 cup sauted onions....i nuke mine for 2 min. with a drizzle of olive oil coverd w/plastic wrap
  • 1/8 cup parmesan cheese
  • 1/4 teaspoon crushd red pepper
  • 1 cup mozzarella cheese, sliced
  • - torn basil leaves or a pinch of dried

How To Make grilled zucchini ricotta pie

  • Step 1
    LET DOUGH RISE .....LIGHTLY DRIZZLE OLIVE OIL ON UR PIZZA STONE N SPRINKLE WITH CORN MEAL FOR A CRUNCHY PIE BOTTOM.
  • Step 2
    STRETCH PIZZA DOUGH ONTO STONE
  • Step 3
    SPREAD RICOTTA ONTO DOUGH
  • Step 4
    SPREAD AROUND GRILLD ZUCCHINI N ONION...SPRINKLE CRUSHD RED PEPPER n PARMESAN CHEESE
  • Step 5
    TEAR BASIL LEAVES ONTOP OF PIE N THEN PLACE SLICED MOZZARELLA AROUND
  • Step 6
    PREHEAT BBQ TO 500.....COOK FOR 10 MINUTES N ENJOY :)
