Tomato Basil Linguine

Super easy meal for a tired weekday evening.

Ingredients

  • 16 oz
    linguine
  • 2 can
    (15 oz) zesty diced tomatoes w/liquid
  • 1
    onion, cut in julienne strips
  • 4 clove
    garlic thinly sliced
  • 1/2 tsp
    red pepper flakes
  • 2 tsp
    dried oregano
  • 2 sprig
    basil, chopped
  • 4 c
    vegetable broth
  • 1/2 c
    water
  • 2 Tbsp
    olive oil
  • parmesan cheese

How To Make

  • 1
    Place pasta, tomatoes, onion, garlic and basil in a large pot. Pour in broth and water. Add pepper flakes and oregano. Drizzle top with oil
  • 2
    Cover pot and bring to boil. Reduce to low, keep covered, cook 10 minutes, stir every 2 minutes.

    Garnish with shredded Parmesan Cheese.
