southwestern casserole

My Mom used to make something similar but I've doctored it up, like most of the things I make...just can't leave them alone! Every time I've made this it disappears and people want the recipe. It's so quick and easy, yummmy too! This was always my kids favorite!

Ingredients

  • 1 1/2 pounds hamburger or ground turkey
  • 1 med - onion chopped
  • 3-6 cloves garlic smashed
  • 3-4 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 14 3/4 ounces can creamed corn, rinse can 1/4c water
  • 10 1/2 ounces canned tomato soup, rinse can 1/4c water
  • 4 ounces can hatch green chilies
  • 3 7/8 cans black olives, cut in 1/2
  • 2 cups cooked noodles, aldente
  • - salt and pepper to taste
  • 1 2/3 cups grated cheddar cheese to spread on top

How To Make southwestern casserole

  • Step 1
    I use cast iron, cook and break up meat; add chopped onions, garlic, taco seasoning, and cumin.
  • Step 2
    In skillet, add remaining ingredients and mix thoroughly. Add can of creamed corn, tomato soup, rinse cans with about 1/3 C water, add this. also add your olives, I cut in half, and your green chilies, chopped.
  • Step 3
    Boil your noodles til aldente drain. You can now mix all ingredients together, the water from cans finishes cooking the noodles.
  • Step 4
    Spray Pam on a rectangle casserole or use skillet and place meat, etc, plus noodles then put your cheese on top, place in oven for about 30-45 min at 350. I will smell divine!!! chow down!!
