A wonderfully easy, yet elegant dinner made w/ shrimp, shallots, green onions, and basil.

Ingredients

  • 1/4 pound linguimi
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 2 tablespoons finely minced shallots
  • 2 - tomatoes, finely chopped
  • 1/4 tablespoon crushed basil leaves
  • 1/2 pound cooked, small shrimp
  • 2 - green onions, chopped
  • - salt and pepper to taste

How To Make shrimp linguini w/ shallots and basil

  • Step 1
    Cook linguini as directed, drain. In lg skillet, over high heat, cook garlic and shallots in oil 1 mins.
  • Step 2
    Add tomatoes and basil, cook 2 mins, stirring. Add shrimp, cook, stirring until hot and cooked through. Sprinkle w/ green onions, season w/ salt and pepper. Serve over linguini.
