OMG, this recipe is so like a frozen entree that I used to buy when I was working and couldn't cook every night. This is a vegetarian version but chicken added to it makes it extra good.

Ingredients

  • 8 oz
    spaghetti
  • 2 Tbsp
    sesame oil
  • 1 bunch
    green onions, sliced -- white parts only
  • 1 tsp
    minced fresh ginger
  • 1/3 c
    creamy peanut butter - or chunky for added crunch
  • 1/4 c
    soy sauce
  • 1/4 c
    hot water
  • 1 Tbsp
    cider vinegar
  • 1 tsp
    sugar
  • 1/4 tsp
    crushed red pepper flakes
  • ·
    green onion tops for garnish

How to Make PEANUT NOODLES

Step-by-Step

  1. Cook the spaghetti in a large pot of boiling water until al dente. Drain.
  2. Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.
  3. Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.
  4. Toss spaghetti with sauce. Garnish with green onion tops, if desired.
