2 Tbspsesame oil
1 bunchgreen onions, sliced -- white parts only
1 tspminced fresh ginger
1/3 ccreamy peanut butter - or chunky for added crunch
1/4 csoy sauce
1/4 chot water
1 Tbspcider vinegar
1/4 tspcrushed red pepper flakes
·green onion tops for garnish
How to Make PEANUT NOODLES
- Cook the spaghetti in a large pot of boiling water until al dente. Drain.
- Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.
- Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.
- Toss spaghetti with sauce. Garnish with green onion tops, if desired.
