OMG, this recipe is so like a frozen entree that I used to buy when I was working and couldn't cook every night. This is a vegetarian version but chicken added to it makes it extra good. Recipe & photo: allrecipes.com 07-10-14

Ingredients
- 8 ounces spaghetti
- 2 tablespoons sesame oil
- 1 bunch green onions, sliced -- white parts only
- 1 teaspoon minced fresh ginger
- 1/3 cup creamy peanut butter - or chunky for added crunch
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 tablespoon cider vinegar
- 1 teaspoon sugar
- 1/4 teaspoon crushed red pepper flakes
- - green onion tops for garnish
How To Make peanut noodles

Step 1Cook the spaghetti in a large pot of boiling water until al dente. Drain.

Step 2Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.

Step 3Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.

Step 4Toss spaghetti with sauce. Garnish with green onion tops, if desired.
