OMG, this recipe is so like a frozen entree that I used to buy when I was working and couldn't cook every night. This is a vegetarian version but chicken added to it makes it extra good.

Ingredients

spaghetti
2 Tbsp
sesame oil
1 bunch
green onions, sliced -- white parts only
1 tsp
minced fresh ginger
1/3 c
creamy peanut butter - or chunky for added crunch
1/4 c
soy sauce
1/4 c
hot water
1 Tbsp
cider vinegar
1 tsp
sugar
1/4 tsp
crushed red pepper flakes
green onion tops for garnish

How to Make PEANUT NOODLES

Step-by-Step

  • 1Cook the spaghetti in a large pot of boiling water until al dente. Drain.
  • 2Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.
  • 3Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.
  • 4Toss spaghetti with sauce. Garnish with green onion tops, if desired.
