OMG, this recipe is so like a frozen entree that I used to buy when I was working and couldn't cook every night. This is a vegetarian version but chicken added to it makes it extra good. Recipe & photo: allrecipes.com 07-10-14

Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons sesame oil
  • 1 bunch green onions, sliced -- white parts only
  • 1 teaspoon minced fresh ginger
  • 1/3 cup creamy peanut butter - or chunky for added crunch
  • 1/4 cup soy sauce
  • 1/4 cup hot water
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon crushed red pepper flakes
  • - green onion tops for garnish

How To Make peanut noodles

  • Step 1
    Cook the spaghetti in a large pot of boiling water until al dente. Drain.
  • Step 2
    Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.
  • Step 3
    Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.
  • Step 4
    Toss spaghetti with sauce. Garnish with green onion tops, if desired.
