1Cook your pasta according to the package instructions.
Saute the minced garlic and shallot in the olive oil until tender,add the red roasted peppers.(chop them roughly before adding) add the chicken stock and cook for 2-3 minutes,set to the side to cool slightly.
2Place the red roasted pepper mixture in the food processor and pulse until well incorporated,add all but three tablespoons of the feta cheese,season with salt and pepper and puree until just smooth.
3When the pasta is finished cooking,strain and reserve some pasta water in the event you need to loosen the finished pasta dish. Toss the pasta with the pepper sauce,divide on serving plates and garnish with feta and freshly chopped basil or parsley. Serve with a nice garden salad and enjoy!! :)
